Ingredients
- 1 cup of tigernuts
- 4 cups of water
- 1/2 coconut
- 10 dates to sweeten
- 2 inch ginger root
- If you are using dried tigernuts or dates, wash and soak them overnight in a bowl full of water.
- Clean and cut up your coconuts and ginger root
- Into a blender, add the soaked tigernuts and dates after they have been drained, add your coconut, ginger and 4 cups of water.
- Blend until smooth and creamy
- Place a cheese cloth over a bowl and transfer your blended mixture unto the cheese cloth, then you squeeze out the juice.
- Pour into an airtight container and store in the fridge.
- Shake before serving. Serve cold.
